Santa Fe Style Portobello Burgers

Ingredients:

4 portobello mushroom caps
2 tablespoons olive oil
salt
1 cup fresh black bean and corn salsa
1 avocado, thinly sliced
Lettuce
Ranch Dressing (bottled or your own creation:)
4 whole grain hamburger buns

Directions:

Preheat grill or heavy pan to medium-high heat (about 350-375F).
Brush Portobello mushroom caps with olive oil and sprinkle with salt both sides.
Grill, for 3-4 minutes per side. Remove from grill and assemble burger, spreading  ranch dressing on both the bottom and top buns, layering lettuce, grilled Portobello, avocado slices, salsa, and additional ranch dressing.
You can buy black bean and corn salsa or make your own version using jarred salsa mixed with corn kernels (frozen or canned) and cooked black beans.
