Nutrient Packed Chocolate Cookies

Ingredients:
  • 1 can of black beans
  • 1/4 cup cooked sweet potato flesh
  • 3/4 cup pitted dates
  • 1/2 tsp baking soda
  • 1 tsp baking powder
  • 1 scoop of Macro Coco Greens
  • 1 tsp vanilla
  • 2 tbsp coconut oil

Directions:
  • Drain and rinse black beans.
  • Soak the pitted dates in hot water for 5 minutes.
  • In a food processor, combine the black beans, pitted dates, sweet potato, coconut oil, vanilla, baking powder, baking soda, and Macro Coco Greens. Process mixture until smooth.
  • Using a tablespoon cookie scoop, portion out 20 dough balls.
  • Place portioned dough on a baking sheet lined with parchment paper, then flatten out the dough with a spatula. Add in mini chocolate chips if you would like.
  • Bake for 12-14 minutes and let the cookies cool, then enjoy!
