Nutrient Packed Chocolate Cookies

Ingredients:
- 1 can of black beans
- 1/4 cup cooked sweet potato flesh
- 3/4 cup pitted dates
- 1/2 tsp baking soda
- 1 tsp baking powder
- 1 scoop of Macro Coco Greens
- 1 tsp vanilla
- 2 tbsp coconut oil
Directions:
- Drain and rinse black beans.
- Soak the pitted dates in hot water for 5 minutes.
- In a food processor, combine the black beans, pitted dates, sweet potato, coconut oil, vanilla, baking powder, baking soda, and Macro Coco Greens. Process mixture until smooth.
- Using a tablespoon cookie scoop, portion out 20 dough balls.
- Place portioned dough on a baking sheet lined with parchment paper, then flatten out the dough with a spatula. Add in mini chocolate chips if you would like.
- Bake for 12-14 minutes and let the cookies cool, then enjoy!
