Nutrient Packed Chocolate Cookies

Ingredients:
 1 can of black beans 
 ¼ cup cooked sweet potato flesh
 ¾ cup pitted dates 
 ½ tsp baking soda
 1 tsp baking powder
 1 scoop of Macro Coco Greens 
 1 tsp vanilla
 2 tbsp coconut oil


Directions:
 Drain and rinse black beans. 
 Soak the pitted dates in hot water for 5 minutes. 
 In a food processor, combine the black beans, pitted dates, sweet potato, coconut oil, vanilla, baking powder, baking soda, and Macro Coco Greens. Process mixture until smooth. 
 Using a tablespoon cookie scoop, portion out 20 dough balls. 
 Place portioned dough on a baking sheet lined with parchment paper, then flatten out the dough with a spatula. Add in mini chocolate chips if you would like. 
 Bake for 12-14 minutes and let the cookies cool, then enjoy!
